Caramel Syrup

Makes: 240 ml • Time: 12 minutes

  • 150 g sugar
  • 90 g water, divided
  • 20 g butter
  • Pinch of salt
  • 1/2 tsp vanilla extract
  1. In a saucepan, melt sugar with 30 g water without stirring until amber.
  2. Carefully whisk in remaining 60 g hot water, then butter, salt, and vanilla. Cool.
