- 150 g sugar
- 90 g water, divided
- 20 g butter
- Pinch of salt
- 1/2 tsp vanilla extract
- In a saucepan, melt sugar with 30 g water without stirring until amber.
- Carefully whisk in remaining 60 g hot water, then butter, salt, and vanilla. Cool.
